Batch freezer
This equipment is one of the must-haves for any ice cream shop. A batch freezer produces batch after batch of ice cream, frozen yogurt, sorbet, custard, gelato, or other frozen desserts. A large amount of ice cream is possible to produce in about 10 minutes. Some units can make hard ice cream and gelato with their two speeds. Most batch freezers have alarms that go off when the product becomes ready for removal. These freezers are available in as small as 3 quarts and as big as 44 quarts. Most small to medium ice cream shops usually get a 24-quarts batch freezer.
Soft-serve machine
A soft-serve machine adds air to the ice cream mix and achieves a lighter consistency and softer texture by maintaining it at a higher temperature. It keeps the ice cream in this state for long periods. Dispensing it in custom ice cream cups or cones is easy when a customer orders. These machines are available as floor types or countertop types. Most units can hold up to two flavors, but some allow mixing these flavors in a twirl.
Hardening cabinet
This cabinet preserves the best possible state and quality of the ice cream. Rapidly freezing ice cream prevents the forming of large ice crystals that may sully its taste and texture. It protects the ice cream against heat stock to avoid bacterial growth at the same time. It also gives it longer shelf life. Most hardening cabinets can accommodate up to 43 3-gallon tubs. They are available in single, double, or quad door configurations.
Walk-in freezers
These freezers operate either with a self-contained or remote refrigeration system. Some come with a configuration for two different temperatures, allowing storage of items needing different levels of coldness in a single space. These freezers are available for customization but will require professional installation. Pre-assembled units are plug and play.e
Chest freezers
These freezers are great for those who want to break into the ice cream business. They are excellent and affordable compared to walk-in freezers. These are often for the storage and holding area of freshly-made ice cream. Since these freezers offer no proper hardening, ice cream has a much shorter shelf life.
Storage dipping cabinets
These cabinets feature several rows of dual-access stainless steel lids. Some of these come with a refrigerated topping rail to house cold topping containers, dipping wells, syrup jars, and pumps. Most units can have from 5 to 10 syrup jars.
